Easy Butter Chicken
500g chicken breast, diced
2 Tbsp oil
50g butter
3 Tbsp crushed tomatoes (or 1 medium tomato, diced)
2½ Tbsp Curry Paste
200ml dairy or cashew cream
½ tsp Garam Masala
Salt, to taste,
Fresh coriander, to garnish
Heat oil and butter in a pan over medium heat.
Add the chicken and sauté lightly until sealed.
Mix curry paste with a little hot water, add and cook 4-5 minutes.
Add tomatoes, cover and cook 7-10 minutes until chicken is tender.
Turn off heat and stir through cream.
Finish with Garam Masala and garnish with coriander.
Serve with rice, naan or roti.
