The perfect sweet treat when those cravings kick in, but you’re on a low carb diet.
Yields: 12 (4x4cm squares)
75g Whole Earth Baker’s secret sugar replacement (available from supermarkets)
1tsp vanilla essence
¼ cup Healtheries baking bits milk chocolate
100g Peanut butter – your choice
2 tbsp cocoa
Method: Line a baking dish/sheets with baking paper. In a saucepan on medium to low heat, melt the butter, sugar, vanilla, chocolate chips, and peanut butter. When all the ingredients are melted, add the cocoa. Mix well removing all lumps. Let the mixture simmer for about 3-4min stirring constantly with a wooden spoon, making sure it doesn’t burn. When the time is up, remove the saucepan from the heat. Continue stirring for another 1min. Be careful – the mixture is really hot! When it’s ready, it will come away from the sides. Pour it into your pre-lined dish and let it set for a few hours. Cut into a block and enjoy! Only 2g net carbs per serving.
